One of the best parts of hosting Christmas Dinner is you get all the leftovers – That being said you can only have so many turkey sandwiches until you are sick of them. In our house we make a delicious leftover casserole using the slow cooker, it’s one of my favourite things about Christmas and is really easy to make!

I had a lovely day with visitors in the morning and then we cooked Christmas Dinner for 5 of us in the afternoon. It’s the 8th time we’ve made Christmas Dinner and to be honest it’s fairly straight forward once you have your timings right – To do this I get a sheet of paper and note down what time everything needs to go in the oven and what time it needs to come out! This trusty system has worked every year, it eliminates any stress from cooking.
Leftover Casserole
To make the casserole add all of your leftovers into the slow cooker. On they day we had a good variety of food so I had turkey, gammon, pigs in blankets, stuffing, carrots and parsnips all leftover from Christmas Day. Next you add in 1 tin of chopped tomatoes and 1 passatta. Finally sprinkle in 1 teaspoon of each of the following – paprika, cayenne pepper, mixed herbs and garlic. Mix all the ingredients together and leave for 6-8 hours on a low heat.
You will be left with a delicious casserole which tastes so good and makes the house smell great too.
It may be too late for this years leftovers but save this recipe and you may find it comes in useful for next years Christmas leftovers.
